Get to know Chef Josh Moore, the heart behind DC Dining’s healthy and delicious meals.

My journey has taken me from New York City to Denver, from classical culinary training to leading teams in fast-paced, high-expectation environments. But at the heart of it all, food has always been about people. At Denver Christian School, I’m excited to bring my experience into a school setting, creating meals that are nutritious, well-crafted, and enjoyable. My goal with DC Dining is to serve food that supports the health of students and faculty, made with care in every step of the process.”

Meet Chef Shelly Gilbert, the creative force behind DC Dining’s pastries and baked goods.

Baking has always been a hands-on way for me to connect with others, especially students. After graduating from Johnson & Wales with a degree in Baking and Pastry Arts, I’ve had the chance to work in restaurants, hotels, schools, and catering kitchens across Colorado. Now at DC, I get to bring that experience into a space where creativity and learning go hand in hand. Whether it’s offering tastings of a new recipe or chatting with students in the lunch line, I love making food that invites curiosity and brings a little joy into the day.

Frequently Asked Questions

Menus are posted in advance so you can plan ahead. You can view the latest menus through your FACTS parent login, and you can also find updates in our Campus Meals section.

DC Dining uses rotating menus with a mix of favorites, seasonal options, and selections that can work well for vegetarian or allergy-friendly needs.

DC Dining follows established nutrition guidelines, and a majority of our school lunch recipes are USDA-approved. These standards help ensure meals are balanced, thoughtfully prepared, and aligned with recommended nutritional requirements. View our current campus meals menu.

Yes. Students typically have several ways to build a meal they enjoy, including a complete meal option, rotating hot à la carte items like chicken tenders, pizza dippers, bean and cheese burritos, or pot stickers, along with cold-prep selections such as sandwiches, bento boxes, and salads.

Fruits and vegetables are included with full meal purchases, and students are encouraged to choose at least one fruit and one vegetable as part of a balanced meal. Fruits and vegetables can also be sold separately, giving students added flexibility and choice.

Portions are adjusted by age group, with larger portions offered for older students. There may also be a price difference between K-5 and 6-12 meals.

Because Denver Christian School does not participate in the National School Lunch Program, DC Dining covers the full cost of food, labor, packaging, and preparation.

Parents can monitor purchases and account balances through FACTS, including itemized history and daily spending.

Lunch boxes are designed for days you need food ready to go, such as field trips, special days, or group needs. Options and ordering instructions are provided in the Lunch Box section.
